I am a final year Asian looking for internships. I haven't taken any steps yet and am planning to do USCE just after taking my Final Uni exams. What are the documents i need to get ready for the process.

Internship or electives? You're eligible for electives if you haven't graduated.
Almost all schools require TOEFL for electives. There are schools which do not require step 1.
Go to https://services.aamc.org/eec/students/ for a complete list of schools offering electives.
Apart from that you will need your transcript, dean's letter, LOR's from faculty you have worked with, Letter of intent. Some school's like Ichan school of medicine at mt.sinai requires toxicology report, cleveland clinic requires background check, Jefferson asks proof of funds, UAB needs faculty sponsor and so on.
You will need to submit health forms signed by a physician with records of PPD, vaccinations ( Hepatitis B, Polio, MMR, Influenza, Tetanus, Varicella, even meningococcal some times) and IgG antibody titres (usually for hepatitis b, varicella, measles, mumps and rubella)
You will need proof health insurance and in some cases malpractice insurance.
