one thing for sure, take the exam on your peak performance level. usually in your study course you will see gradual increase of your score, peak and then plateau phase on that peak level. Take your exam once you achieved the plateau.

Don't lose the problem solving skills that you have acquired during qbanks drill. If you feel like you still want to study, then have a solid plan. Best is doing fresh qbanks while you reread MTB / important notes.

Doing fresh qbanks trains your ability to pick up important piece of info, applying concepts, time management. doing previous questions while enforcing the concepts you may still have difficulty with, doesn't train you on those aspects.

the higher you score on mock exam, the less the variability. take another NBME to see the trend. from your over all score you seem ready for it.

I only use 2 qbanks, Kaplan then Uworld as the very last. K qbank is indeed way way difficult. The length of question in real exam is a lot closer to k qbank.

Usually ppl use Uworld the very last. But it's up to you. Take another NBMEs, if your trend is the same then you're ready.

I understand your dilemma, it is true that a lot of people who scored +260 on NBME finished up with 240's on the exam, actually a good friend of mine had the same story.
As IMlover wrote, the point is taking the exam in your peak which sounds like just about now, some things your cant expect like the kinds of questions you will get, my dogma about step 1 was that if one scores above 240 on a NBME the score he might get in the actual exam is fluctuating highly from 235- 265, the rest is for luck for what kind of questions you will get on your exam, if they will cover your strong or weak points. The same goes for step 2 if you scored 260 + on NBME or UWAT your score can fluctuate according to the topics you will be tested on the exam itself - this is something your cant predict so there is no point in further delay.
Last but not least, I would recommend doing as many questions as possible now - try to do offline NBME's the free 150 questions and take the exam.
