You can start with tutor mode with mixed questions.
Or if you plan on doing UW more than one time you can start subject wise tutor mode and then when you are done with the first time, start timed/mixed.
No of blocks per day depends on how much study hours you put in daily. There is a poll here on this forum. Search it and you'l get an idea, but you can start with 2 blocks a day and see if you can finish it on time.
About the practice tests (UWSA, NBME) do them later when you have got an idea how to attempt the questions.
There's also a poll on which qbank and which books are good for study. You can search for it.

It depends on what stage of study you are. If you are in the beginning of your study then it's better to do it untimed and system by system, i.e. use UW as a review bank. But if you are towards the end of your study then it's better to do timed and random blocks, i.e. use UW as a practice and assessment tool.
